Sun Dried Tomato Hummus
3 c peeled and roughly chopped zucchini
1 c sun dried tomatoes*
1 tbsp tahini
2 tbsp lemon juice
dash of cumin
: Blend all ingredients until smooth. Enjoy with veggies dippers. Some of my favorites are romaine lettuce hearts, bell peppers, and cucumbers.
*note - if your sun dried tomatoes are halves rather than slices you may want to soak them for 15-20 minutes beforehand. Also, ideally, you want to use salt free, oil free tomatoes.
