5 Minute Kale and Corn Salad
1 small avocado
2 bunch kale
juice of 1 lemon (approx. 3 tbsp)
1-2 ears corn, cut off the cob
Remove kale stems and roughly chop. Place in a bowl
Add avocado and lemon juice to kale and massage thoroughly with hands. The more you massage, the more tender the kale will become.
Top with corn and enjoy!
Note: this salad would also be great with added herbs like cilantro or dill.
