Creamy Mango Spinach Noodle Bowl
Blend mangoes, avocado, and lemon juice until smooth. Add in spinach and blend on a low speed until the spinach is chopped small and thoroughly incorporated, but not blended completely.
Place zucchini noodles in a large bowl and top with sauce. I enjoy this meal as is, but if you'd like a little more flavor, you can add fresh herb such as green onion, garlic chives, basil, rosemary, sage, cilantro, etc.
